The Original Sommelier Knife Forge de Laguiole was created in collaboration with professional sommeliers, and the design shows it. The corkscrew is a conical spiral with five turns, shaped to work through the delicate corks of older wines, while the lever uses a patented operating principle and is cast from heated metal to stay resistant under intensive use.
This version pairs an olivewood handle in a satin finish with an engraved lever. The blade is sharpened so the capsule cuts cleanly, and because the handle is a natural material, the maker notes that colour, veining and grain vary from one piece to another. Each knife is supplied with an elegant leather case.
In the cellar it earns its place beside the Durand rather than instead of it: this is the everyday professional instrument for sound corks, kept sharp and ready. The maker lists it at EUR 314.40 on the official shop at forge-de-laguiole.com.
